Chilli Caramelised Onions

SERVES 4 :
4 large brown onions, peeled
70 ml olive oil
50 g butter, cubed
1 Tbsp red wine vinegar
50 g soft brown sugar
50 g maple syrup
1 tsp fresh rosemary, finely chopped
1 tsp fresh thyme, finely chopped
1 tsp dried chilli flakes
- 1- Fit your Magimix with the food processor bowl and the 4mm slicing disk. Cut the onions in half and slice.
- 2- Replace Magimix food processor bowl with the Cook Expert bowl and add the onions along with all other ingredients. Set to EXPERT programme for 50 minutes at Speed 3 and 90 degrees C.
- 3- Once done, allow to cool and store in the fridge for up to a week.To make the best Australia Day hot dogs lightly toast a long brioche bun, fill with some cos lettuce leaves, Toulouse sausage and top with plenty of Bitton/Magimix Chilli Caramelised Onions and fresh chives.
