Triple Chocolate Hazelnut Oat Cookie

Triple chocolate cookies made with oats and wholemeal flour, the perfect afternoon snack for hungry

Serves 10 :
125 g unsalted butter
75 g light brown sugar
1 medium egg
1/2 tsp vanilla extract
100 g wholemeal flour
100 g rolled oats
1 tbsp cocoa powde
1/2 tsp bicarbonate of soda
50 g blanched hazelnuts
25 g milk chocolate chips
25 g white chocolate chips
1Preheat the oven to 180C and line two baking trays with parchment paper.
2Place the main blade in the main bowl of your Magimix food processor, then add in the butter and sugar and press auto; blitz until smooth.
3Add the egg and vanilla extract, then press pulse for a few seconds to mix. If necessary use the spatula to scrape the mixture down from around the sides.
4Add in the flour, oats, cocoa and bicarbonate and press auto to blitz again, until everything is well combined.
5Remove the bowl from the base of the Magimix and take out the main blade.
6Mix in the hazelnuts and chocolate chips with a spoon and then remove the mixture from the bowl.
7Divide the mixture into 10 equal sized balls and divide them between the two trays.
8Press each ball down and mould into a cookie shape.
9Bake for 15 minutes then remove from the oven and allow the cookies to cool on the tray for 5-10 minutes before transferring to a wire rack to cool completely.
