SERVES 30+ Table Spoons :

200 g celery (leaves can be used as part of the weight)

2 carrots, roughly chopped

1 tomato, quartered

2 cloves garlic

1 onion medium, peeled and quartered

1 zucchini, roughly chopped

A sprinkling of fresh herbs like basil, oregano, sage, rosemary

1 bunch curly parsley

150 g rock salt

1 Tbsp olive oil


Vegetable Stock Paste

  • 1- Place all vegetables in the metal bowl. Select EXPERT mode. 20sec/speed 15/no temperature.
  • 2- Add salt and oil. Select EXPERT mode. 20min/speed 3/120C.
  • 3- Once cooked, still using EXPERT mode, 1min, slowly going from speed 3-16 to pulverise.

CHEF’S TIP :

1 Tbsp concentrate = 1 stock cube. Perfect to use in stews, risottos and soups. Store in refrigerator in an airtight container. Can also be stored in freezer to extend life of the stock.
