Sweet Chilli Chicken and Cashews

500 g chicken breast, cut into 1cm thick strips
1 tbsp peanut oil
1 bunch brocollini, chopped
1 red capsicum, cut into strips
43 g raw unsalted cashews
1 bunch coriander
75 g sweet chilli sauce
75 g oyster sauce
200 g baby corn stems, halved

Add oil to metal bowl. STIR FRY function. Cap off. Run for 2 minutes of the 7 minutes to heat the oil.
- 1 tbsp peanut oil

Stop machine after 2 minutes and add chicken. Run for a further 3 minutes.
- 500 g chicken breast, cut into 1cm thick strips

Stop machine and add veggies & sauces, replace cap. Add an additional 3 minutes so total time remaining is 5 minutes.
- 1 bunch brocollini, chopped
- 1 red capsicum, cut into strips
- 75 g sweet chilli sauce
- 75 g oyster sauce
- 200 g baby corn stems, halved

Add cashews through cap for the last minute.
- 43 g raw unsalted cashews

Serve with rice or rice noodles, add coriander. Enjoy!!
